A tawny colour with a yellow halo that signifies an advanced stage of maturity. This is genuine colour of a 20 year-old cask-aged wine. It has a warm red color with a slight orange tone at bottom of glass. A lively aroma with a velvety texture. Fruit aromas: grapefruit, apricot, almond, hazelnut and cocoa bean. Wood aromas: vanilla, old Port wine casks and phenol. Roasted aromas: cinnamon, caramel, coffee. Ethereal aromas: stearin and iodine. Smooth and dry in mouth, complemented by a rich and generous persistence of flavour. A fine and delicious attack. elegance of first contact with palate is maintained through a complex sequence of ripe and dried fruits and nuts in a fresh and liquorice-like harmony. Delicious as an aperitif or following an evening meal. It can also accompany chocolate, cheeses and cream-based desserts or desserts that are not overly sweet. After de-stemming, the berries are transferred to the wine press, where a short cold maceration takes place with dry ice (4 to 6 hours at 46-50A F). Gentle pressing is performed and the must is sent to stainless steel tanks where the lees are allowed to settle for 48 hours. The must is racked to another tank where cool fermentation takes place, using select yeasts specific for Sauvignon Blanc. After fermentation, the wine is racked by gravity, without using pumps, to stainless steel tanks for storage.
