This wine is from France, Burgundy region, Cote De Nuits sub-region and Nuits St Georges appellation. In 2006, Pascal Marchand, who had forged an international reputation as a brilliant winemaker over more than two decades, launched a new Burgundian micro-negociant business under his own name. A native of Montreal and an adventurer at heart, Pascal began his career in wine working the harvest at Chateau de Chorey-les-Beaune in Burgundy in 1983. He returned the following year and quickly established himself as one of the region's rising stars after being hired by the Domaine du Comte Armand in Pommard. Little known before then, the Domaine and its Premier Cru monopole vineyard Clos des Epeneaux quickly gained renown and Pascal's wines became recognized by prominent journalists and aficionados as reference points for Pinot Noir's modern style. After 15 years at Comte Armand, he took on a new challenge in 1999, working with the Boisset family to launch their showcase estate, the Domaine de la Vougeraie - one of the most ambitious projects the region had seen since World War II. The association with the Boissets also led Pascal to further expand his horizons, consulting on their projects in Beaujolais, Minervois, California, Canada and South America. Since leaving the Boisset group in 2006, Pascal has established himself independently as a winemaker and consultant - in Burgundy at Domaine Jean Fery et Fils; in Sonoma, California at Joseph Phelps' Freestone Winery; in Niagra, Canada at Tawse Winery; in Australia at Carlei in South Yarra and Heathcote, Prancing Horse in Mornington Peninsula, Turner's Crossing in Bendigo, and with his own brand Marchand & Burch, which he founded with his friend Jeff Burch in Western Australia. Finally, he continues to work with VC Family Estate in Chile and Argentina, whose collection of brands includes Veranda, a brand Pascal had launched with Boisset in 2002. Today, Pascal's personal passion and commitment to working with Burgundy's most distinctive terroirs is realized through his new negociant business, which has grown to encompass 36 appellations of the Cotes de Nuits and a few, mainly for white wines, from the Cotes de Beaune. The production, which has reached 6,000 cases, is now being marketed under a new label: Marchand & Tawse, since Pascal formed a partnership with long-time friend and business associate Moray Tawse. The fruit for these wines is sourced from growers Pascal knows and trusts, and vineyards with a minimum of 35 years of age. All are perfectly maintained. Many are farmed organically, which is not surprising since Pascal has been a leader in the use of organic and biodynamic methods through the years. All of his operations are carried out according to the lunar calendar. The wines are vinified and matured in cellars in the heart of Nuits-St.-Georges, using barrels selected from two specialized artisanal coopers. The wood is selected from the best plots in the forests of Alliers, Cher, Compeigne, Fontainbleau, Jupille and Oise. The staves are seasoned for 4-5 years and the barrels are toasted very lightly and slowly. This wine is from France, Burgundy region, Cote De Beaune sub-region and Pommard appellation. In the world of wine, Pommard hardly needs an introduction. From time immemorial, Pommard has been the site of famous vineyards. Around the year 1 000, the whole side facing South-East was covered with vines. According to tradition, it already produced a wine reputed for its depth of colour and its ability to travel far and wide. To-day, Pommard is one of the largest villages in Burgundy. The village is on a slope, in the middle of a group of vineyards facing East or South-East. The soil, a mixture of red clay and limestone, is responsible for the wine's original qualities : good colour, intense bouquet and firm structure. Pommard can only be a red wine, produced from the Pinot Noir grape. To insure low yields, the vines are pruned very short, in the Guyot style. The grapes are picked by hand and put in small crates to avoid damage during transportation to the winery. The fermentation occurs in open wooden or stainless steel fermenters. The total maceration generally lasts 15 to 18 days. The wine is kept in barrels for 18 months before bottling. According to the vintage, it is sometimes better to wait at least two years before drinking the wine. . Pommard has a lovely and powerful complex nose reminiscent of black cherries and spices. On the palate, it has a good structure with generous fruit and subtle tannins.. This great red Burgundy deserves a more traditional cuisine : red meat in light sauces, game, venison and ripe cheeses will create a rich tapestry of flavours worthy of a medieval feast. For centuries, Pommard has been considered the quintessential Burgundy: deep red in color, powerfully aromatic, solid and dependable. The appellation, one of the first designated AOCs (1936), is planted exclusively to Pinot Noir. Laboure Roi Pommard arises from a network of small vineyards, each producing just five to 15 barrels in entirety. Thanks to ideal growing conditions, Pinot Noir grapes reach optimum maturity and balance. On the lower portions of the slopes, the soil is largely alluvial in content. Mid-slope, the clay and limestone rich soils are well drained thanks to the presence of stony debris. The uppermost portions of the slopes comprise Jurassic (Oxfordian) marls, brown calcic and brown limestone soils. In places, the soil is reddened by the presence of iron. Exposure: south or east. Altitudes: 250-330 meters (720-984 feet). Pommard, with its dense, massive tannins, is a stellar representative of the Cote de Beaune and is highly prized for it aging ability. Its name, ”taillefer” comes from ”taille” (pruning) and ”fer” (iron), indicating the difficulty of pruning at the top of the hillside, where the slope is steepest.. In 1971, while in his early 20's, Pierre inherited the family estate which encompassed 19 owned acres and metayeur responsibilities for superbly placed 1er Cru and Grand Cru vineyards belonging to Domaine des Comtes Lafon. As his metayage contracts expired, Pierre took on more outside responsibility and in 1990, was appointed winemaker at the venerable Domaine Leflaive where he produced stunning, benchmark white Burgundies for 20 years. Upon his retirement, he and his daughter Anne founded Morey-Blanc, a negociant company. Pierre's eponymous 27 acre domaine includes holdings in Monthelie, Pommard, Puligny-Montrachet and Meursault and the vineyards are farmed using biodynamic practices. At Morey-Blanc, Pierre and Anne share responsibilities and have slowly and carefully expanded the portfolio. They currently produce wines from some of the most respected vineyards in the Cote d'Or, including Montrachet, Corton-Charlemagne, Aloxe-Corton, Meursault Charmes and Saint-Aubin. The Chablis region, the most northern of the Burgundy wine regions, is divided into four appellations: Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. Michel Gros is a member of the sixth generation in a dynasty of Burgundian vignerons that dates back to 1830 in the village of Vosne-Romanee. In 1975 Michel, the eldest of Jean Gros’ children, began working with his father at the family estate, Domaine Jean Gros. He then established his own Domaine in 1979 and ran both properties until his father retired in 1995 and divided the Jean Gros estate amongst his three children - Anne-Francoise (Domaine A-F Gros), Bernard (Domaine Gros Frere et Soeur), and Michel (Domaine Michel Gros). Michel inherited the five acre monopole Vosne-Romanee 1er Cru Clos des Reas, which had been in the family since 1860, two parcels in Nuits-St.-Georges, one plot in Vosne-Romanee and another in Hautes Cotes de Nuits. In 1997, the Ecard family entrusted Michel with the management of their properties in Nuits-St.-Georges (including the 1er Crus Vignerondes and Murgers) and Vosne-Romanee; and later, in 2008, a parcel in Hautes Cotes de Nuits. In total, Michel now farms 57.5 acres, of which 38 are located in the Hautes Cotes de Nuits. Each of the Gros wines reflects the depth and class of its individual terroir, as well as the commitment of its humble but passionately dedicated vigneron. In recognition of his work, Michel has been awarded numerous medals and accolades, including ”Best Red Wine Maker” and ”Best Pinot Noir” awards at the International Wine Challenge in 2002 and 2003. By all rights, Bruno should have managed the estate, but sibling dissention led to the sale and/or long term lease of the vineyards. A winemaker by birth and by choice, Bruno founded his Domaine from scratch with a vineyard in Marsannay, a rented plot in Fixin, the “En La Rue de Vergy' parcel in Morey-St. Denis and the Dominode vineyard in Savigny-les-Beaune. Over the past 33 years, Domaine Bruno Clair has grown to encompass 56.83 acres, with holdings in Clos de Beze, Cazetiers, Clos St-Jacques, Vosne-Romanee, Clos du Fonteny and Chambolle-Musigny. In the 1990's, additional vineyards were purchased in Corton-Charlemagne, Pernand-Vergelesses, Aloxe-Corton and Gevrey-Chambertin Petite Chapelle. Like his father Bernard, Bruno maintains a rigorous selection of the best pinot noir and chardonnay vines by cultivating those that produce small grapes with perfect ripeness and demonstrate good resistance to diseases and viruses. Bruno does not use chemical fertilizers, relying instead on plowings and harrowing of the soil throughout the year and compost. Grapes are hand-harvested and selection is carried out primarily in the vineyards. The wines mature for 16-22 months in oak barrels; the percentage of new oak barrels will vary from 20%- 50 %, based on the vintage. Bruno firmly believes in a non-interventionalist approach. From time immemorial, Pommard has been the site of famous vineyards. Around the year 1 000, the whole side facing South-East was covered with vines. According to tradition, it already produced a wine reputed for its depth of colour and its ability to travel far and wide. To-day, Pommard is one of the largest villages in Burgundy. The village is on a slope, in the middle of a group of vineyards facing East or South-East. The soil, a mixture of red clay and limestone, is responsible for the wine's original qualities : good colour, intense bouquet and firm structure. Pommard can only be a red wine, produced from the Pinot Noir grape. To insure low yields, the vines are pruned very short, in the Guyot style. The grapes are picked by hand and put in small crates to avoid damage during transportation to the winery. The fermentation occurs in open wooden or stainless steel fermenters. The total maceration generally lasts 15 to 18 days. The wine is kept in barrels for 18 months before bottling. According to the vintage, it is sometimes better to wait at least two years before drinking the wine. . Pommard has a lovely and powerful complex nose reminiscent of black cherries and spices. On the palate, it has a good structure with generous fruit and subtle tannins.. This great red Burgundy deserves a more traditional cuisine : red meat in light sauces, game, venison and ripe cheeses will create a rich tapestry of flavours worthy of a medieval feast. Situated right below Le Montrachet, its soil has a slightly different component : a brownish limestone mixed with a lot of gravel. This exceptional terroir causes the Chardonnay grape to act merely as the messenger between this unique subsoil and the wine itself. The grapes are always picked by hand and brought immediately to the winery in Beaune. A delicate pneumatic press is used so as to retain as much as possible of the immense potential of this precious juice. It is then allowed to ferment in partially new oak barrels. Twelve or thirteen months later, the wine is bottled.. With a wine of this stature, a few years are definitely needed before a bottle should be opened. It is only then that all the aromas of toasted bread, almonds, honey, exotic wood can really be appreciated. On the palate, Batard-Montrachet always strikes us with its monumental structure. Interestingly, there is even a touch of tannin that provides an added dimension. The aftertaste is simply glorious : powerful, voluptuous and seemingly unending. . Only the most refined dishes can do justice to such a wine : foie gras is high on the list, followed by lobster bisque, crayfish, vol-au-vent, sweetbread, white meat chicken in cream sauce. The Chardonnay is the unique grape variety used to produce these great white wines. The House of Joseph Drouhin brings to the making of these wines its utmost care, in the respect of tradition. At the time of harvest, usually around mid-September, the grapes are hand-picked in small cases and then brought to the winery en Chavet, in Beaune. The grapes are gently pressed. The juice settles down for a few hours before going into oak barrels. Once the alcoholic and malolactic fermentations are completed, the wine is racked off its lees. It is aged in oak barrels for 9 to 10 months. Les Folatieres shares with the other wines of Puligny its distinguished and distinctive aromas of fern, honeysuckle and toasted bread. Due to its position, there is also a characteristic gout de terroir, a firm backbone and the proven ability to age very well. Although the wines are very pleasant when young, they can be kept for a long time, 6 to 8 years in a normal vintage, up to 15 years for a great vintage. .
