This wine is from France, Burgundy region, Cote De Beaune sub-region and Pommard appellation. In the world of wine, Pommard hardly needs an introduction. From time immemorial, Pommard has been the site of famous vineyards. Around the year 1 000, the whole side facing South-East was covered with vines. According to tradition, it already produced a wine reputed for its depth of colour and its ability to travel far and wide. To-day, Pommard is one of the largest villages in Burgundy. The village is on a slope, in the middle of a group of vineyards facing East or South-East. The soil, a mixture of red clay and limestone, is responsible for the wine's original qualities : good colour, intense bouquet and firm structure. Pommard can only be a red wine, produced from the Pinot Noir grape. To insure low yields, the vines are pruned very short, in the Guyot style. The grapes are picked by hand and put in small crates to avoid damage during transportation to the winery. The fermentation occurs in open wooden or stainless steel fermenters. The total maceration generally lasts 15 to 18 days. The wine is kept in barrels for 18 months before bottling. According to the vintage, it is sometimes better to wait at least two years before drinking the wine. . Pommard has a lovely and powerful complex nose reminiscent of black cherries and spices. On the palate, it has a good structure with generous fruit and subtle tannins.. In 2006, Pascal Marchand, who had forged an international reputation as a brilliant winemaker over more than two decades, launched a new Burgundian micro-negociant business under his own name. A native of Montreal and an adventurer at heart, Pascal began his career in wine working the harvest at Chateau de Chorey-les-Beaune in Burgundy in 1983. He returned the following year and quickly established himself as one of the region's rising stars after being hired by the Domaine du Comte Armand in Pommard. Little known before then, the Domaine and its Premier Cru monopole vineyard Clos des Epeneaux quickly gained renown and Pascal's wines became recognized by prominent journalists and aficionados as reference points for Pinot Noir's modern style. After 15 years at Comte Armand, he took on a new challenge in 1999, working with the Boisset family to launch their showcase estate, the Domaine de la Vougeraie - one of the most ambitious projects the region had seen since World War II. The association with the Boissets also led Pascal to further expand his horizons, consulting on their projects in Beaujolais, Minervois, California, Canada and South America. Since leaving the Boisset group in 2006, Pascal has established himself independently as a winemaker and consultant - in Burgundy at Domaine Jean Fery et Fils; in Sonoma, California at Joseph Phelps' Freestone Winery; in Niagra, Canada at Tawse Winery; in Australia at Carlei in South Yarra and Heathcote, Prancing Horse in Mornington Peninsula, Turner's Crossing in Bendigo, and with his own brand Marchand & Burch, which he founded with his friend Jeff Burch in Western Australia. Today, Pascal's personal passion and commitment to working with Burgundy's most distinctive terroirs is realized through his new negociant business, which has grown to encompass 36 appellations of the Cotes de Nuits and a few, mainly for white wines, from the Cotes de Beaune. The production, which has reached 6,000 cases, is now being marketed under a new label: Marchand & Tawse, since Pascal formed a partnership with long-time friend and business associate Moray Tawse. The fruit for these wines is sourced from growers Pascal knows and trusts, and vineyards with a minimum of 35 years of age. All are perfectly maintained. Many are farmed organically, which is not surprising since Pascal has been a leader in the use of organic and biodynamic methods through the years. All of his operations are carried out according to the lunar calendar. The wines are vinified and matured in cellars in the heart of Nuits-St.-Georges, using barrels selected from two specialized artisanal coopers. The wood is selected from the best plots in the forests of Alliers, Cher, Compeigne, Fontainbleau, Jupille and Oise. The staves are seasoned for 4-5 years and the barrels are toasted very lightly and slowly. Domaine Bonneau du Martray is recognized as one of the world's great wine estates and a reference point for its appellation. It is the sole estate in Burgundy to produce only Grand Cru wines with the further advantage of holding the single largest contiguous parcel in Corton-Charlemagne.The current winemaker and proprietor, Jean-Charles le Bault de la Moriniere whose family is only the third set of owners in over twelve centuries, calls hiswine the product of light rather than heat . The vineyard's unique west and south west aspect significantly increases the exposure of light on the vines, without running the risk of excessive heat. The estate’s 11.09 hectare holdings, the largest in the appellation, are in contiguous parcels in the heart of the Charlemagne ‘climat' - 6.57 hectares within commune of Aloxe-Corton and 4.52 in Pernand-Vergelesses. There are 15 parcels totaling 9.5 hectares of Chardonnay which produce Corton-Charlemagne and a single parcel of 1.5 hectares of Pinot Noir from which small quantities of Corton Rouge are made. Each parcel is vinified separately and offers unique qualities to the final assemblage. The soils range from limestone, marl and clay on the upper slope, imparting a floral elegance to the wines, to limestone with iron topsoil below which lend body and ripeness. For many, Domaine Bonneau du Martray is Corton-Charlemagne - one of the very greatest of all Grand Cru white Burgundies, synonymous with a style that combines elegant reserve with remarkable balance, concentration and purity.. After pneumatic pressing, alcoholic fermentation generally begins in small stainless steel vats after pre-fermentation maceration at low temperature. The origin of the name Meursault itself is somewhat controversial. Some people believe it is derived from the Latin Muris Saltus translated as jump of a mouse. More probably, it comes from an old Celtic root, mare, meaning swamp : the lower part of the village is actually on very flat land. During the Middle-Ages, the monks realized that there were wide distinctions between the vineyards. They also started to give them names related to the general aspect of the fields or the kind of vegetation they bore. One such vineyard was planted with juniper trees : it became Genevrieres. Another one was very stony : they called it Perrieres. As a matter of fact, the soil of Perrieres has a very hard and chalky soil. It has a light brown colour with many broken stones that reflects the sun during the day. It is dry, poor, and the roots of the vines have to go deep into the soil to find water. The grape variety is Chardonnay 100%. At harvest, the grapes are hand-picked and pressed very gently in a pneumatic press. The juice starts to ferment naturally in barrels. The malolactic fermentation is always left to follow its course. The percentage of new oak varies with the vintage, never exceeding 40%, so that oak never dominates the fruit. During the next nine or ten months, the wine slowly matures in barrels and develops its complexity. . The bouquet of Meursault Perrieres is not only elegant and refined but also very complex. Among all the Premier Crus of Meursault, it is the most reserved and it always takes a few minutes for the wine to fully develop its aromas and flavours. It is a wine of great distinction. The central part of the Cote de Beaune comprises an area predestined to produce great white wines, and Puligny-Montrachet is certainly one of its most glorious examples. Among its Premier Crus, the vineyard of Les Folatieres is one of its most famous, occupying a central position on the higher part of the slope, next to Les Pucelles and Clavoillons. The soil of Les Folatieres is very chalky and stony : a great part is actually limestone debris, which encourages good drainage. The Chardonnay is the unique grape variety used to produce these great white wines. The House of Joseph Drouhin brings to the making of these wines its utmost care, in the respect of tradition. At the time of harvest, usually around mid-September, the grapes are hand-picked in small cases and then brought to the winery en Chavet, in Beaune. The grapes are gently pressed. The juice settles down for a few hours before going into oak barrels. Once the alcoholic and malolactic fermentations are completed, the wine is racked off its lees. It is aged in oak barrels for 9 to 10 months. Les Folatieres shares with the other wines of Puligny its distinguished and distinctive aromas of fern, honeysuckle and toasted bread. Due to its position, there is also a characteristic gout de terroir, a firm backbone and the proven ability to age very well. Although the wines are very pleasant when young, they can be kept for a long time, 6 to 8 years in a normal vintage, up to 15 years for a great vintage. . Like all great white wines, Puligny-Montrachet Folatieres deserves to accompany the best fish and shell fish dishes, such as lobster or crabmeat in a light wine sauce, salmon, trout or Dover Sole simply grilled or poached. Dave was working at Barossa’s Rockford Winery when he began dreaming of his own wine label, dedicated to making wine from some of the valley’s oldest vines He helped a few area growers nurture some neglected, decades old Shiraz and Grenache vines back to health. Nearly lifeless and overgrown he was rewarded with a few small parcels of dry grown fruit, which he turned into wine. Contracts were then negotiated for the use of these vineyards with the individual growers, and so the old practice of share farming returned to the Valley. This secured for Torbreck a regular supply of the best Barossa Shiraz, Grenache, and Mataro (Mourvedre) vineyards containing some of the oldest vines in the world, between 120 to 160 years old. His Torbreck label, named after a forest in Scotland, where he worked as a lumberjack, debuted in 1997 with the release of a small 1995 vintage. Yields are invariably low, and the resulting wines are deeply impressive. Torbreck wines, like the Cornas, Condrieu, and Hermitage that Powell holds up as inspiration, are muscular but not beefy, pleasurable even as they lean towards profound. The wines have been praised effusively since the beginning by the world's leading wine critics and journalists and are represented on the wine lists of the world's best restaurants. In 2008 the completion of a state of the art, eco-friendly winery, packaging and administration building has meant the realization of David's goal to have all Torbreck wines produced and bottled on the estate. Torbreck remains a Barossa Valley benchmark as well as one of the world's leading wine estates.. The wine spends two years in old oak barrels, with a mix of American and French oak. Fantastic.. Medium garnet in the glass, this wine has a nose of richly oiled leather, cherry and raspberry aromas. In the mouth it is incredibly juicy with cherry, raspberry and incense flavors. I first visited Burgundy in the spring of 1980, and the highlight of the trip was a dinner in Meursault, at the home of the late Guy Roulot. I adored Guy's wines and had long regarded him as one of Burgundy's best vintners. We tasted a number of extraordinary wines at that meal, but the one that stood out was his 1964 Meursault ‘Perrieres', a Chardonnay as close to perfection as I could ever expect. We had just begun Neyers Vineyards and my hope was someday to produce a Chardonnay that stirred my blood the way this one did. The Perrieres vineyard in Meursault rises to 250 meters or so in elevation, and faces southeast to form a natural amphitheater. It takes its name from the deposit of small pebbles in the soil there, a geological peculiarity found no where else in Meursault. These pebbles add a natural minerality to the wines, a characteristic we also find in our El Novillero Chardonnay. There's a similar rocky deposit in the highest portion of the El Novillero vineyard, which is also 250 meters in elevation and faces southeast. Year to year, this celebrated producer vinfies and bottles some of the purest, most thought provoking wines of the appellation. Employing a style of winemaking that might best be described as hands off, this Domaine produces wines that are sensual, opulent and utterly delicious. The winery's roots go back to 1809 when Auguste Moreau built a cellar and farmed his few hectares of Chardonnay and Pinot along the golden slope. The 1930s saw an expansion of the family's vineyards under the guidance of Marcel Moreau who was responsible for acquiring roughly 80% of the Domaine's current vineyard holdings. Bernard Moreau took over the vineyards and cellar in the early 1960's. In 1977 the reputation of this great estate was fully established under the leadership of Bernard and Francoise Moreau and the winery was named Domaine Bernard Moreau. In addition to improving equipment, farming and winemaking, they also purchased additional land bringing the vineyard total to 14 hectares. To maintain healthy, balanced soils the winery uses organic fertilizers and no pesticides. Bernard's sons Alex and Benoit joined the Domaine after having worked in New Zealand, Australia and South Africa - Alex is responsible for the cellars and Benoit for the vineyards. In 2006, Pascal Marchand, who had forged an international reputation as a brilliant winemaker over more than two decades, launched a new Burgundian micro-negociant business under his own name. A native of Montreal and an adventurer at heart, Pascal began his career in wine working the harvest at Chateau de Chorey-les-Beaune in Burgundy in 1983. He returned the following year and quickly established himself as one of the region's rising stars after being hired by the Domaine du Comte Armand in Pommard. Little known before then, the Domaine and its Premier Cru monopole vineyard Clos des Epeneaux quickly gained renown and Pascal's wines became recognized by prominent journalists and aficionados as reference points for Pinot Noir's modern style. After 15 years at Comte Armand, he took on a new challenge in 1999, working with the Boisset family to launch their showcase estate, the Domaine de la Vougeraie - one of the most ambitious projects the region had seen since World War II. The association with the Boissets also led Pascal to further expand his horizons, consulting on their projects in Beaujolais, Minervois, California, Canada and South America. Since leaving the Boisset group in 2006, Pascal has established himself independently as a winemaker and consultant - in Burgundy at Domaine Jean Fery et Fils; in Sonoma, California at Joseph Phelps' Freestone Winery; in Niagra, Canada at Tawse Winery; in Australia at Carlei in South Yarra and Heathcote, Prancing Horse in Mornington Peninsula, Turner's Crossing in Bendigo, and with his own brand Marchand & Burch, which he founded with his friend Jeff Burch in Western Australia. Finally, he continues to work with VC Family Estate in Chile and Argentina, whose collection of brands includes Veranda, a brand Pascal had launched with Boisset in 2002. Today, Pascal's personal passion and commitment to working with Burgundy's most distinctive terroirs is realized through his new negociant business, which has grown to encompass 36 appellations of the Cotes de Nuits and a few, mainly for white wines, from the Cotes de Beaune. The production, which has reached 6,000 cases, is now being marketed under a new label: Marchand & Tawse, since Pascal formed a partnership with long-time friend and business associate Moray Tawse. The fruit for these wines is sourced from growers Pascal knows and trusts, and vineyards with a minimum of 35 years of age. All are perfectly maintained. Many are farmed organically, which is not surprising since Pascal has been a leader in the use of organic and biodynamic methods through the years. All of his operations are carried out according to the lunar calendar. The wines are vinified and matured in cellars in the heart of Nuits-St.-Georges, using barrels selected from two specialized artisanal coopers. The wood is selected from the best plots in the forests of Alliers, Cher, Compeigne, Fontainbleau, Jupille and Oise. The staves are seasoned for 4-5 years and the barrels are toasted very lightly and slowly. CASK 23, made only in exceptional vintages, is usually a blend of the most distinctive fruit from our S.L.V. and FAY estate vineyards. The story of CASK 23 began during the harvest of 1974. Back then, winery founder Warren Winiarski enlisted the help of celebrated winemakerAndre Tchelistcheff. As they tasted through various lots of new wines from that year, they noticed a distinct character in a lot from the center of Block 4, a character they described as “crushed violets'. It was so appealing that they decided to age this wine separately in a wooden cask, number 23. The wine was still so deliciously distinct after further aging in barrel, Warren decided to bottle it separately and give it a special name-CASK 23.. Much of S.L.V. has been replanted, but the vines in Block 4 from the original planting in 1972 still stand, and they continue to produce fruit of exquisite character. Over the years, we've identified other blocks and sub-blocks of our estate vineyards that consistently yield fruit ofexceptional quality, but the choice of which grapes go into CASK 23 is far from automatic. We pick and vinify in small lots, then carefully monitor each lot's development to determine which ones live up to their full potential.The fruit from S.L.V., with its volcanic soils, contribute complex structure, concentration, and spicy intensity, while the alluvial soils of FAY yield fruit with lush perfume and rich berry flavors. When blended together, the intense “fire'-like qualities of S.L.V. and the supple, “water'-likecharacteristics of FAY create a wine of classic elegance, structure, and age-ability. The 2005 ZD Reserve Cabernet Sauvignon represents another example of our commitment to producing powerful cabernets that also exhibit an elegant balance and distinctive style. With ZDs organically farmed Rutherford Estate as the core, this wine is a blend from several small low yielding hillside vineyards in the Napa Valley. Each vineyard lot was fermented and aged separately for one year before blending. The final reserve blend was then returned to barrel for an additional two years of rest in American Oak barrels. Savoring the intense aromas of ripe blackberry, cassis and plum, and subtle notes of clove, anise and sweet vanilla is an absolute joy. In 1992, the first vines were planted at Tom Stolpman’s 220 acre estate in the hills of Ballard Canyon in Santa Ynez, California. The combination of climate which balances mid-day heat with cool foggy mornings and late afternoon ocean breezes, north-south exposure, and well drained limestone soils provides a terroir uniquely suited to growing Syrah, Sangiovese, and Roussanne. Out of 150 acres of vines planted, 100 are devoted to Syrah. Stolpman’s alliance with Domaine Rostaing in Cote Rotie emphasizes their commitment to the varietal and bridges the gap between old and new world styles. Winemaker Sashi Moorman worked as a chef and later honed his winemaking skills at Ojai Vineyards for five years before joining Stolpman in 2001. Italian wine consultant Albert Antonini has advised the Stoplmans for the past decade and is credited with persuading the them to dry farm the vineyard, despite the risk of weakening the vines. Stolpman’s climate-controlled winery in Lompoc is outfitted with state of the art winemaking equipment. White grapes are sorted and pressed, after which their juice goes straight into barrel for fermentation. Red grapes are subjected to a cryo-maceration and fermentation in either stainless steel tanks or upright French oak barrels. Cap management is conducted either by pumpovers or manual punchdowns to extract the desired color, tannin and fruit. After fermentation, the red wines are softly pressed from their skins and racked to a combination of new and neutral barrels. The wines then age to achieve the right balance of flavors and aromas.
