This wine is from United States, California region, Napa County sub-region and Stags Leap District appellation. The FAY vineyard is the land where the story of Stag's Leap Wine Cellars began back in 1969 when Warren Winiarski tasted Nathan Fay's 1968 homemade Cabernet. Warren knew, instantly, that he had found what he was searching for-classic elements of fruit and structure, suppleness and balance. It was a style that Warren refers to as “an iron fist in a velvet glove.' As luck would have it, an adjoining prune orchard was for sale. The Winiarski's purchased the land and planted a vineyard-now known as S.L.V. - and soon after, Stag's Leap Wine Cellars was born.. In 1986, Nathan offered to sell his vineyard to the Winiarski family. In his honor, the vineyard was named FAY. By the time we acquired the vineyard, many of the vines were nearly a quarter-century old and nearing the end of their best growing years. We embarked on an ambitious replanting program, experimenting with rootstocks, row orientation, and trellising to attain optimal expression of the terroir. Our replanting efforts are now fully realized and all vineyard blocks are in production. Vineyard blocks on the eastern slope, closest to the Palisades, contribute structural components derived from the volcanic soils there, while the more aromatic components come from the vineyard blocks on the western alluvial upland. When blended together, we achieve the classic expression of ”an iron fist in a velvet glove.”. There is ”plenty” to love about this stylish wine, starting with generous aromas of violets, blackberry, nutmeg, and black licorice reminiscent of “Good ‘n Plenty' candy. The aromas are followed by an alluring mix of dark fruit flavors that envelop the palate with accent notes of chocolate and vanilla. The 2005 FAY Cabernet Sauvignon is smooth and silky, with a richness and persistence all the way through the slightly smoky oak finish. They seem to be well on their way, which is good news for consumers. This is a large estate of 104 acres, all situated as one giant block of vineyards in the southern part of the Stags Leap appellation. The change in ownership and winemaking staff shows progressive improvement with each vintage starting with 2007. The 2009s look to be their best wines to date. As for the 2007 reds, normally four cuvees are produced, all based on Cabernet Sauvignon, including the Cask 23, which comes from the best lots from the Fay and S.L.V. estate vineyards after fermentations are completed. The name of HENGST means stallion.The soil of the 360 meter high slope which dominates this vineyard is essentially a mixture of limestone from the Vosges, chalky marl (14% active) and layers of red, brown, green and beige sediment hundreds of meters thick. The mother rock is of an orange - yellow hue. Dating as far back as the Jurassic period the elements vary in density from very fine to very course. The Ph factor is within 7.8 to 8.3. This Grand Cru is 130.95 acres (53,02 Ha) of vines. The combined calcareous and marl soils tend to produce rich full bodied wines. In their youth they have an untamed character, reminiscent of the vineyard’s name - ”stallion”. They slowly mature to astonishing aromatics and fabulous richness.. The grapes were hand picked and whole-bunch pressed very slowly and gently in pneumatic presses over 5-8 hours to give a clean must and a beneficial amount of skin contact. Transferred to thermo-regulated stainless steel tanks the juice then began a natural fermentation using only its own natural yeast which lasted for one month. The fermentation was initially temperature controlled but was eventually allowed to proceed at its own pace to allow the wine to develop its own character and complexity. The wine stabilized in stainless steel tanks naturally during the winter season and, following a very gentle filtering, was bottled in March 2007 before the heat of summer to preserve the natural carbonic gas (a natural anti-oxidant). Malolactic fermentation is always avoided at Josmeyer and no chaptalization takes place.. There’s good richness in this dry white, but it seems slimmer, thanks to the racy structure. Peach, tangerine and mineral notes are in harmony, aligned with the body and the acidity as this glides to a long finish.. While developing Cabernet Sauvignon vineyards on our Conn Valley ranch, it became apparent that one parcel in particular stood out above rest - literally as well as figuratively - given it was highest elevation and rockiest parcel on property. It took four years to develop, due to rock removal and steepness of slopes. results were worth effort. We found that out in 2005 when Cabernet Sauvignon crop from this block proved to be not only darker and more intense but dramatically different in aroma and flavor. We bottled it separately and called it ame, for some our soul is certainly in it. It's important to us as well that there's some recognition of our three children, Alexandra, Michael and Elizabeth, whose first name initials make up word. International Wine Cellar rating: 90.

Pinot Grigio is the common Italian name for the French variety Pinot Gris and is probably the name by which the variety is best known to most wine drinkers. In France, Pinot Gris is planted in Burgundy and the Loire, but it is in Alsace, where it is known as Tokay, that the wine is most revered, providing super-rich, usually dry wines that can be partnered with food. Pinot Grigio is made in disparate styles that change not merely from region to region but from producer to producer. The differences are immediately apparent in the color, which may go from light straw to yellow gold to a transparent pale copper tint. Such variations usually reflect the differing intentions of the winemakers. The grape is one of only a few white wine varieties that has anthocyanin pigments (red) in the skin. Gewurztraminer is another. At Forest Glen, winemaker Ed Moody made his Pinot Grigio in a style that emphasizes freshness and delicate fruit characteristics. The wine had no skin contact during fermentation nor did it undergo malolactic fermentation as is traditional with some Italian Pinot Grigios. The short barrel time (two months) added complexity and a softer aftertaste without overwhelming the fruit quality.

The Columbia Crest Reserve Semillon Ice Wine is a brilliant, complex wine with unusual origins.Like many great European ice wines, this wine was crafted from grapes left hanging on the vine into December. During the 2005 harvest, we designated a Semillon block from the Columbia Crest Estate suitable for dessert wine. The block was repeatedly evaluated during the ensuing weeks, and after each evaluation we opted for longer hang time. Cooler temperatures blew through the vineyard late in the year, and as the thermometer registered 17F December 9, 2005, harvest commenced.Rock solid grapes were harvested and pressed just until the grape juice was liberated from the fruit. Because the sweet juice melts before the water component, the remaining frozen fruit material was quickly discarded to avoid diluting the rich, succulent nectar.
