Produced from Moscato Bianco Canelli sourced from various estate vineyards in the village of Castiglione Tinella in the Cuneo province of Piedmont. Fermentation takes place in special pressurized tanks. After roughly a week of fermentation, when the wine has reached the proper balance of alcohol, sugar and acidity, it is chilled down and fermentation is arrested. The wine then goes through a sterile filtration to eliminate the yeast, and is bottled cold. To insure freshness the wine is fermented one tank at a time, 12 months a year.. . Fragrant aromas of summer stone fruits like apricot and peach explode from the glass. The palate is refreshing with mouth watering acidity. Binomio is the brainchild of Stefano Inama from Azienda Agricola Inama and Sabatino Di Properzio from Fattoria la Valentina. The idea was simple and born from their conviction that Montepulciano is a grape of extraordinary potential. High yields and poor vinification had robbed it of character in much the same way that Garganega had been squandered in Soave. Planted in 1971, the Binomio vineyard sits at an elevation of 985- 1,640 feet on clay and limestone soil. The vineyard is planted exclusively with the lowyielding Africa clone that produces short-tailed bunches with small berries that resemble the shape of the African continent. The unique combination of mountainous terroir, old vines, and a strict selection produce a wine which displays the concentration and complexity for which Montepulciano is famous. The property is owned and operated by the husband and wife team of Marco Pallanti and Lorenza Sebasti. Marco was a young viticulturalist who in a very few years had become one of the most highly respected winemakers in Tuscany. He began to experiment with non-traditional varieties such as Merlot, Chardonnay, and Pinot Noir, to enhance the concept of cru wines (introducing Vigneto Bellavista, Vigneto La Casuccia and L’Apparita) and to utilize small oak barrels. In 2003, he was crowned Oenologist of the Year by Vini d’Italia, published by Gambero Rosso and Slow Food. Over the past 30-40 years, he replanted all of the vineyards and upgraded all of the winemaking capabilities to make this one of Tuscany's showcase producers. 90 hectares are planted to vines at an average altitude of 480 meters with a southern exposure and clay calcareous soils. The Tenute Cisa Asinara dei Marchesi di Gresy, made up of three estates situated in the Langhe and Monferrato zones, is recognized for producing many of the greatest wines in the Piedmont region. After years of selling grapes from the estate to the region’s top producers, in 1973 Alberto di Gresy began vinifying his own wine with the objective of producing wine using modern technology while respecting tradition, and to transferring as much of the character of the terrain, vineyard site and varietal into the bottle. The Martinenga estate, the only monopole in Piedmont grows primarily Nebbiolo grapes for the production of Barbaresco as well as Barbera and Cabernet Sauvignon. Also, at Martinenga, are newer vineyards of Sauvignon Blanc and Chardonnay. Nearby in the Commune of Treiso d’Alba is the Monte Aribaldo estate where Dolcetto d’Alba is grown. In Monferrato, the La Serra estate produces exclusively Moscato dAsti. Martinenga, with its 11 hectares of Nebbiolo vines, is considered to be one of the greatest single vineyards dedicated to the production of Barbaresco. Its ideal southern exposure and blue marl soils produce fruit that is transformed into a Barbaresco of extraordinary class and finesse.. Three elements are distinguishable on the palate: the floral hints of Chardonnay, the green apples and nettles of Muller Thurgau and the typical aromatic touch of grapefruit and roses of the Traminer.
