This wine is from United States, California region, Napa County sub-region and Napa Valley appellation. Our second label, RED C, is made predominantly from grapes grown at the Young Family Vineyard in Napa Valley, just south of St. Helena. Like Covenant, RED C is made from 100 percent Cabernet Sauvignon. The blend includes some of the barrels from Covenant that don't make it into our premier bottling, but that still show excellent character and finesse. Because RED C includes a bit of press wine, it remains in barrels for an extended period and is released some 6 months later than Covenant. The balance of concentrated fruit flavors and smooth tannins produce a wine approachable now and worthy of aging. Hand picked in early October from Rudya s block of the Warnecke; Chalk Hill, vineyard. Crushed and destemmed to fermentor undergoing a two-day cold soak before onset of fermentation. Inoculated with pure yeast culture and fermented warm at between 87A F - 91A F. Pressed at dryness, racked and inoculated for malolactic fermentation. Elevated entirely in new French, tight grain barrels for 17 months. Bottled without filtration.Will age easily 8 years and beyond if stored between 55A F - 60A F. As the wine was not fined or filtered, it may produce sediment as it ages. Minimize
