This wine is from Israel, Galilee region. The Yarden Merlot shows great personality, combining ripe berry and cherry notes with jam, spice, chocolate and nuances of orange peel. These characters are highlighted with a background of rich oak and vanilla. This Merlot is full-bodied, complex and delivers a long, tasty finish. Yarden Merlot drinks well now, but will continue to improve with a few years of age. This wine should stay in good shape for up to a decade if stored in good conditions. We enjoy Yarden Merlot with bold flavors such as moussaka, grilled spicy lamb sausages, or a perfectly cooked rack of lamb roasted over a bed of fresh rosemary. Yarden Merlot is made from Merlot grown in the central-northern Golan Heights, mostly from the vineyards Ortal, Yonaton, Allone Habashan and Shaal. It has a black fruit aroma, with a bouquet of cacao, coffee and vanilla, and very soft tones of spices in the background.The palate echoes scents of black fruit, prunes and cherry and the balanced acidity leaves a refreshing sensation. Our second label, RED C, is made predominantly from grapes grown at the Young Family Vineyard in Napa Valley, just south of St. Helena. Like Covenant, RED C is made from 100 percent Cabernet Sauvignon. The blend includes some of the barrels from Covenant that don't make it into our premier bottling, but that still show excellent character and finesse. Because RED C includes a bit of press wine, it remains in barrels for an extended period and is released some 6 months later than Covenant.
