After being hand harvested, grapes follow meticulous winemaking techniques perfected by Martin Ray over sixty years ago. grapes are gently crushed and fermented in open-top tanks for two weeks, creating rich structure in wine. Minimal sulfur dioxide usage preserves fruit intensity and enhances rich, round tannins. Aged for thirty months in French oak barrels, 35 percent in new oak barrels and 65 percent in 14 year old barrels, intensifies complexity and character of wine. Although labor intensive, these techniques produce superbly enhanced flavors and textures in our wines. Santa Cruz Mountains Cabernet Sauvignon is a distinctive wine with beautiful balance and solid structure. Inviting, elegant aromas of vanilla and cherry lead to lush flavors of blackberry and plum, finishing with a lingering whisper of toasty oak. Aging in French oak barrels on lees develops rounder, creamier texture in wine. A nice jewel-like nose with inviting aromas of fresh juicy pear and spice notes. Rich flavors of lemon, creme brulee, light spice and toast are framed by an oak backbone. Finishes dry and crisp with a pronounced minerality. FOOD & WINE PAIRING A succulent dish of fresh lobster tails with a rich butter sauce, fettuccine alfredo or a butternut squash soup would be an excellent match for our Chardonnay.
