It is made using select lean cuts of pork meat, ground into a fine paste, seasoned with natural ingredients like salt and pepper, and stuffed in a casing to be cooked in special humidity-controlled ovens. Small cubes of fat taken from the pig's neck are added to bring an element of sweetness to mortadella's characteristically full-flavor, and firmness to its otherwise soft, velvety texture. Our Parmella is made using the same method, but is much smaller is size. Mortadella is most often served thinly sliced or cut into cubes, but can also be used to give an added flavor to pasta fillings, or ground into meat dishes. Served with or without pistachios.

For sandwich lovers, there are plenty of variations for the "mile-high" substantial, healthy appetite variety. (We're not referring to dainty-finger sandwiches here.) There are Dagwoods, and Subs, Hoagies and Po Boys, all with abundant filling combinations.But the one that absolutely stands out for us is none other than the Muffuletta. Very popular in New Orleans, it has a special ingredient that we find particularly appealing. That ingredient is the Muffuletta garnish, which is basically an Italian olive salad. Usually, Muffulettas begin with a round loaf of crusty bread, cut horizontally. The fillings are Provolone cheese, salami, mortadella and any combo of other lunchmeats and cheeses that your taste dictates. But before these are added, the bread on both halves is spread with the Muffuletta salad. Onions may be added as well as roasted red peppers. The sandwich is then put together, wrapped in plastic-wrap, pressed and refrigerated for several hours so the flavors can mellow. When ready to serve, cut into wedges like a pie, and enjoy.Our Pagliacci brand Muffuletta is loaded with pitted green olives and Kalamata olives along with many of the vegetables found in Giardiniera , such as cauliflower, peppers, carrots and pepperoncini.
