Sugar replacement in food and beverage manufacture no longe
... Read more
Sugar replacement in food and beverage manufacture no longer has just an economic benefit. The use of ingredients to improve the nutritional status of a food product is now one of the major driving forces in new product development. It is therefore important, as options for sugar replacement continue to increase, that expert knowledge and information in this area is readily available.Sweeteners and Sugar Alternatives in Food Technology provides the information required for sweetening and functional solutions, enabling manufacturers to produce processed foods that not only taste and perform as well as sugar-based products, but also offer consumer benefits such as calorie reduction, dental health benefits, digestive health benefits and improvements in long term disease risk through strategies such as dietary glycaemic control. Part I of this comprehensive book addresses these health and nutritional considerations. Part II covers non-nutritive, high-intensity sweeteners, providing insights into blending opportunities for qualitative and quantitative sweetness improvement as well as exhaustive application opportunities. Part III deals with reduced calorie bulk sweeteners, which offer bulk with fewer calories than sugar, and includes both the commercially successful polyols as well as tagatose, an emerging functional bulk sweetener. Part IV looks at the less well-established sweeteners that do not conform in all respects to what may be considered to be standard sweetening properties. Finally, Part V examines bulking agents and multifunctional ingredients. Summary tables at the end of each section provide valuable, concentrated data on each of the sweeteners covered. The book is directed at food scientists and technologists as well as ingredients suppliers.

The Rajah of Darjeeling Organic Tea is about Makaibari - the first tea garden in the Himalayan Highlands. This book captures the magic of Makaibari and provides a rare glimpse of one of Darjeeling 's greatest characters - the Thunderbolt Rajah. He is a champion of the organic tea movement, a social activist for tea labourers and small organic farmers, an anthropologist who works tirelessly to preserve the cultural heritage of the Himalayan region and an environmentalist who fights to conserve its rich biodiversity. Rajah Banerjee is a living legend in Darjeeling . As an environmental investigator, he has studied the huge and magnificent model, Makaibari, for years. He is a follower of Rudolf Steiner - the Austrian philosopher who founded the biodynamic agriculture movement, the predecessor to organic farming. Based on Steiner's biodynamic principles, Rajah converted Makaibari to an organic tea estate in 1988, abjuring the accepted practice of maximising yields through artificial fertilisers and pesticides. Rajah moves on foot and horseback, interacting and learning from everyone who crosses his path - the lone traveller, the tea estate residents, social activists, visiting scholars and agronomists, to name a few. The Rajah of Darjeeling Organic Tea chronicles the evolution of Makaibari, a homestead which, by merely addressing and redressing its problems on the ground and from the ground, has become an ideal, a panchavati, where the home and the forest are merged in identity. It is an outstanding archetype of human beings in nature, producing peace, not just tea leaves of extraordinary quality. Makaibari is a vedic village of which ayurvedic tea is a mere by-product, and not its singular identity. Included with this book is the award-winning hour-long documentary The Lord of Darjeeling (both in English and French) made by Xavier de Lauzanne, the renowned documentary filmmaker from France, which captures the true spirit of Makaibari, and is moving audiences at various festivals globally.

The Hafner family originated in Switzerland and migrated to France, where they settled next to Lyon (Lyons), the heart of the most famous French culinary region. In 1929 Johanes Hafner purchased the company which would bear his name. Andre Hafner, Johanes's son, carried on to manufacture cookies of all sorts, Yule logs, and a variety of products requested by his customers. In 1968 Andre Hafner doubled the size of the company and it became known as a quality pie shell / tartlet plant. His son Pierre-Andre Hafner followed in his steps. In 1989 Pierre-Andre Hafner, Johanes’ grandson, took over the company and continued the legacy of quality products. In 1990 Pierre-Andre Hafner inaugurated an office with a warehouse in Atlanta, GA to service the domestic US market through a network of distributors. By 1996 Pierre-Andre Hafner once again double the size of the production facility by adding an industrial sized manufacturing line of Scottish Dough Sponge Cake products and Kosher items. The factory uses several quality control tools (HACCP control, supplier control) in order to guarantee the best quality. The Atlanta, GA main US distribution center also expanded. New and original product lines from other European and North American manufacturers were imported to satisfy the ever more discriminating American consumers. Our lines are extremely successful with hotels, caterers and bakeries. The Hafner USA lines have made a name for themselves in the US for their top notch quality, elegance, resistance to humidity, ease of use (all items are baked and ready to fill), one year shelf life, dry storage and the convenient food service packaging.

The second edition of Kosher Food Production explores the intricate relationship between modern food production and related Kosher application. Following an introduction to basic Kosher laws, theory and practice, Rabbi Blech details the essential food production procedures required of modern food plants to meet Kosher certification standards. Chapters on Kosher application include ingredient management; rabbinic etiquette; Kosher for Passover; and the industries of fruits and vegetables, baking, biotechnology, dairy, fish, flavor, meat and poultry, oils, fats, and emulsifiers, and food service. New to this edition are chapters covering Kosher application in the candy and confections industries and the snack foods industry. A collection of over 50 informative commodity-specific essays – specifically geared to the secular audience of food scientists – then follows, giving readers insight and understanding of the concerns behind the Kosher laws they are expected to accommodate. Several essays new to the second edition are included. Kosher Food Production, Second Edition serves as an indispensable outline of the issues confronting the application of Kosher law to issues of modern food technology.

Mott's was founded in 1842 by Samuel R. Mott in Bouckville, New York, where he made cider. Mott's cider and vinegar caught on with his neighbors and, as demand grew, so did the size of his mill. Before the turn of the century Clipper ships were carrying Mott's champagne cider and casks of Mott's vinegar around Cape Horn to California. Mott's successfully exhibited their products at world fairs in Paris and Brussels. They promoted their wares at the Philadelphia Centennial of 1876 and the Chicago Columbian Exposition of 1893, picking up first prizes for quality. In 1900, the Mott Company merged with the W.B. Duffy Cider Company of Rochester, NY. Duffy-Mott had been almost entirely in the cider and vinegar business then had an idea go into other fields such as champagne cider until Prohibition cut short its career. During the decade following acquisition of the Standard Apple Products Company and its plant in Hamlin, NY in 1929, Duffy-Mott introduced a series of new fruit products that contributed more to its growth than events of any prior decade. In 1930 apple sauce was added to the Mott line. In 1938, the company introduced Mott's apple juice. Because cider had become established as a purely seasonal item, it was believed that warehousing and other problems could be eased with a year-round apple juice. The company's production people and researchers went to work to develop processing techniques whereby the natural flavor and bouquet of apples could be captured in a bottle. Because of the location of its plants, Duffy-Mott had not been able to extend its Mott's lines west of the Rockies. But this changed in June of 1960, when the company leased the 407,000-square-foot plant and purchased all the processing equipment of the Pratt-Low Preserving Corporation from Thriftimart Inc., a West Coast food chain.

Paradise Fruit Company was incorporated in 1961 as part of Canaveral Utilities and Development Co., a land development operation on the east coast of Florida. The name "Paradise", a label used by a company that had been in the 'glace' (candied) fruit business since the end of WW2, was acquired by Canaveral during the year of incorporation. After several acquisitions and mergers with similar businesses, 'glace' fruit became the major segment of the company's business. In 1965, the name was changed to Paradise Fruit Company, Inc. During those years, there were a number of relatively small operations manufacturing candied fruit, primarily for sale to commercial bakers. The management of Paradise anticipated that there was a great potential for direct sales to homemakers through supermarkets. Over a period of several years, Paradise developed the now familiar transparent, reusable plastic containers found in almost every supermarket during the holiday season. In order to become more immediately responsive to its customers needs, the company invested in a facility to manufacture all of its packaging. This, combined with large inventories, enabled almost overnight filling and shipping of orders. During the same period, the company acquired, merged with, or was licensed by a number of competitors to become the leading marketer of 'glace' fruit products under labels that have been trusted and asked for by customers for generations. Given the increasing diversification, the name of the company was changed to Paradise, Inc. in 1993. Paradise remains an innovator in 'glace' fruit marketing, introducing in 2003 a new package design that incorporates recipes and a cash-redeemable coupon.
