The Vollrath 72090 Nitro full-size power cookers are designed to take a container of cooked food from below 40 degrees Fahrenheit, through the HACCP inchdanger zone inch, and up to 150 degrees Fahrenheit in less than 90 minutes. The 72090 is able to maintain a certain temperature when the food product and pan or inset are used with a standard pan or inset cover, when the proper water level is maintained in the well, and when the food product is stirred regularly. The 72090 has a stainless steel well, and a high-efficiency, 1440W element that operates on a 15A circuit. The 72090 has almost twice the water capacity of other countertop models, reducing need to refill the well as often. The 72090 can hold food at a specific temperature with wet or dry heat, although wet heat recommended- as is using up to 4 inch deep food pans.
